Maple Pecan Roasted Sweet Potatoes & Apples Recipe

Ingredients

  • 3 medium sweet potatoes, peeled and cut into bite-sized pieces
  • 2 medium apples, cored and cut into bite-sized pieces
  • 3 tablespoons coconut oil, divided
  • 1 teaspoon sea salt
  • 2 tablespoons maple syrup
  • 1 tablespoon Runnin’ Wild Pecan Seasoning

Instructions

  1. Preheat the oven to 425°F. Lightly grease a large baking sheet or baking pan and set aside.
  2. Season the sweet potatoes. Add the sweet potatoes to a large bowl. Toss with 2 tablespoons of coconut oil until evenly coated. Sprinkle with sea salt and toss again.
  3. Begin roasting. Spread the sweet potatoes in an even layer on the prepared baking sheet. Roast for 20 minutes, stirring halfway through, until they begin to lightly brown.
  4. Prepare the apples. While the sweet potatoes are roasting, add the apples to a bowl and toss with the remaining 1 tablespoon of coconut oil. Add the maple syrup and Runnin’ Wild Pecan Seasoning and stir until evenly coated.
  5. Combine. After the sweet potatoes have roasted for 20 minutes, remove the pan from the oven. Add the seasoned apples and toss everything together.
  6. Finish roasting. Return the pan to the oven and roast for another 15–20 minutes, stirring halfway through.
  7. Serve. Once the sweet potatoes and apples are tender and golden brown and the maple syrup has caramelized around the edges, remove from the oven and serve warm. Enjoy!
