Kale & Pomegranate Crunch Salad

Ingredients:
- 3 bunches of kale, chopped
- 1 head of Romaine, thinly sliced
- 1 Pomegranate
- Candied pecans, chopped
- Parmigiano Reggiano, shaved
- Thin slices of red onion
Dressing: Directions:
- 1/2 cup olive oil
- 3 Tbsp balsamic vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp honey
- 1 Tsp 50/50 Blend Salt and Pepper
Directions:
1️⃣ Build the Dressing
In a bowl, whisk together balsamic vinegar, Dijon mustard, honey, and our 50/50 Blend.
Slowly drizzle in the olive oil while whisking continuously until the dressing is smooth and fully emulsified.
2️⃣ Massage the Kale
Add chopped kale to a large mixing bowl with a small drizzle of olive oil and a pinch of salt. Massage for 30–45 seconds until the kale turns darker, glossy, and tender. This step makes all the difference.
3️⃣ Layer the Flavor
Add sliced romaine, pomegranate seeds, chopped candied pecans, shaved Parmigiano Reggiano, and thin red onion to the bowl.
4️⃣ Toss It Right
Drizzle in the dressing a little at a time, tossing between additions until everything is evenly coated and lightly glossy — not drowning.
5️⃣ Finish Strong
Transfer to a serving bowl and top with a few extra parmesan shavings for that final bold touch. Enjoy immediately.
