Ingredients:

  • 1 ⅓ cups uncooked long grain white rice
  • 3 cups chicken broth
  • 1 pound large or jumbo shrimp, peeled and de-veined
  • 4 tablespoons butter, melted, divided
  • 1 teaspoon minced garlic
  • 5 teaspoons Runnin' Wild Cajun Seasoning
  • Chopped parsley for garnish (optional)

Directions:

1. Melt 2 tablespoons of butter in a large skillet over medium heat. Stir in the minced garlic, half of the Cajun seasoning, and the uncooked rice. Toasting the rice for a minute or two helps build even more flavor.

2. Pour in the chicken broth and bring everything to a boil. Reduce the heat to a simmer, cover, and cook for about 15 minutes. Stir once or twice during cooking to keep the rice from sticking.

3. While the rice cooks, toss the shrimp with the remaining melted butter and remaining Cajun seasoning until evenly coated.

4. Stir the shrimp into the rice mixture, cover again, and cook for another 3–5 minutes, or until the shrimp are pink and opaque.

5. Top with chopped parsley if desired and serve hot straight from the skillet. Enjoy!
